1. Paneer Kofta Recipe

Required Ingredients:

For the Kofta:
  • Grated paneer – 100 gms
  • Boiled and mashed potatoes – 1 to 2
  • Khoya – 50 gms
  • Ginger garlic paste – 2tbspns
  • Turmeric powder – 1 teaspoon
  • Red chilli powder – 1 teaspoon
  • Salt to taste
  • Cumin seeds – 1 ½ teaspoon
  • Coriander seeds – ½ teaspoon
  • Oil – 3tbspns
  • Raisins, chopped – 20 gms
  • Flour – 50gms
For the Gravy:
  • Onions, finely chopped - 2
  • Ginger garlic paste – 4tsp
  • Turmeric powder – 1tsp
  • Red chilli powder – 1 ½ tsp
  • Coriander seeds, grounded – 1 tsp
  • Tomato puree – 1 cup
  • Fresh milk – 1 cup
  • Hung curd – ¼ cup
  • Sugar – ½ tsp
  • Salt, to taste
  • Oil - 3 Tbsp
  • Cinnamon sticks – 2
  • Green cardamoms – 6
  • Cloves – 12
  • Bay leaves – 2 to 3
  • Cumin – 2 tsp

How To Prepare Paneer Kofta?

For the Kofta
  1. In a large deep bowl, add the grated paneer, khoya, potatoes, ginger garlic paste, fresh coriander, ground cumin and coriander seeds, raisins, turmeric powder and red chilli powder
  2. Mix all the ingredients well and knead it with your hands into dough.
  3. Make round koftas from the dough and lightly dust it with some flour.
  4. Refrigerate the koftas for about 15 minutes so that they get firmed up.
For the Gravy:
  1. Heat the oil in a pan and add in the cardamom, cinnamon, cloves, bay leaves and cumin seeds. Wait for it to crackle.
  2. Now add the chopped onions, salt, ginger garlic paste, red chilli powder and coriander seeds. Cook until the onions are golden brownish.
  3. Next, add in the tomato puree and the fresh milk into the gravy and let it cook in low flame for 2 minutes or so.
  4. Now add the hung curd and sugar. Cover the lid and cook for 10 – 15 minutes.
  5. In a separate pan, add some oil and shallow fry the koftas.
  6. Add the shallow fried koftas into the gravy and let it remain in low flame for about 5 – 6 minutes.
  7. Garnish it with some fresh mint leaves, coriander leaves and a nice squeeze of lemon juice.
Note – Adding hung curd and sugar to the gravy helps in balancing the acidity of the mixture.

2. Paneer Bhurji Recipe

Paneer bhurji is a popular north Indian dish, made for breakfasts. It is made from crumbled paneer so it is great when accompanied with naan, bread, rotis etc. You can also serve paneer bhurji as a side dish with rice and curry during lunch or dinner.

  • Paneer – 200 gms
  • Onion – 1 medium size
  • Tomatoes – 2 medium size

How To Prepare Paneer Bhurji?

  1. Crumble the paneer into bits and keep it aside.
  2. Heat the oil or ghee in a pan and add cumin seeds, wait for it to splutter and once they get brown, add the onions and sauté until translucent.
  3. Add ginger-garlic and green chillies, then add in the tomatoes and cook until they are soft. (Tip – Add a pinch of salt to the tomatoes so they cook faster)
  4. Now add all the dry spices – Turmeric, red chilli powder and garam masala powder.
  5. Mix everything well into the mixture, now add in the crumbled paneer and cook for about 2 minutes.
  6. Now add the chopped coriander leaves and serve hot with Parathas, rotis or breads.

Required Ingredients

  • All-purpose flour (Maida) – 1 cup
  • Bread crumbs – ½ cup
  • Paneer cubes – 200 gms
  • Paneer, grated – 50 gms
  • Buttermilk – ½ cup
  • Tomato ketchup – 2 tablespoons
  • Garlic, chopped – 4 cloves
  • Chilli flakes – 1 teaspoon
  • Mixed herbs (oregano, rosemary) – ½ teaspoon
  • Salt as required
  • Pepper powder – 1 teaspoon
  • Cooking soda – ¼ teaspoon
  • Oil – as required

How To Prepare Paneer Pizza Pockets?

  1. In a large bowl, add paneer cubes, grated paneer, salt, pepper, mixed herbs, chilli flakes, tomato ketchup and the chopped garlic. Mix all the ingredients well.
  2. In another bowl, add the flour, salt, soda and butter milk. Knead all the ingredients together into a soft dough. Cover and let it rest for about 15 – 20 minutes.
  3. Roll out the dough into a thin layer and cut them into medium sized rectangular pieces and start filling the with the paneer mixture.
  4. Fold them into pockets and keep aside.
  5. Now make the slurry by adding little quantity of water to the flour mixture. Once it is done, dip the pockets into this mixture and coat them with breadcrumbs.
  6. Deep fry the paneer pizza pockets, and serve hot with tomato ketchup or garlic sauce.

5. Paneer Butter Pepper Fry Recipe

How To Prepare Paneer Butter Pepper Fry?

  1. In a large deep bowl, add the all-purpose flour, rice flour, corn starch, turmeric powder, salt, garam masala powder, Ginger garlic paste and water. Make sure that a thick paste like consistency is formed.
  2. Now put the paneer cubes into this mixture and coat each cube completely on all sides.
  3. Deep fry the coated paneer cubes in a kadai or pan and keep them aside.
  4. Now heat a pan, add butter and once it is melted, add the curry leaves, slit green chillies, coriander powder, chilli powder, ground black pepper, salt and fried paneer pieces.
  5. Toss the paneer and drizzle few drops of lemon juice and serve with fresh chopped coriander leaves.

6. Paneer Lababdar Recipe

Paneer lababdar is simply a mouth-watering meal that works equally well with both naans and rice. It is rich, creamy and has an amazing blend of all spices, especially methi which gets aromatic when combined with other masalas present in this dish.
  • Preparation time: 15 minutes
  • Total time: 30 minutes (approx.)
  • Servings: 4

Required Ingredients

  • Paneer – 250 gms
  • Tomatoes, Roughly chopped – medium sized, 5
  • Onions, roughly chopped – 2
  • Garlic cloves, chopped – 8 to 10
  • Ginger – ½ inch
  • Cashew nuts – 10
  • Green cardamom – 2
  • Bay leaf – 1
  • Red chilli powder – 1tsp
  • Turmeric powder – a pinch
  • Garam masala powder – ½ tsp
  • Dried fenugreek leaves (methi) – ¼ tsp
  • Salt to taste
  • Oil – ¼ cup
  • Water – 2 glasses

How To Prepare Paneer Lababdar?

  1. In a pan, add a glass of water and add the chopped tomatoes, ginger, garlic cloves and cashew nuts. Cook this on a medium flame for about 10 minutes or until the tomatoes are nice and soft.
  2. Transfer this mixture in a plate and let it cool completely.
  3. After it has cooled down, add turmeric powder, red chilli powder and garam masala powder to the mixture.
  4. Heat the pan with some oil once again, add cumin seeds and when it begins to crackle, add the bay leaf, green cardamom and onions.
  5. Fry the onions until they are nice and brown and turn off the flame.
  6. Let this mixture cool off completely.
  7. Now, add this mixture along with the tomato mixture to a blender and blend into a paste. You can add little water if needed to make it fine.
  8. In the same pan, add some more oil and when it is heated, add this paste and cook on medium heat until the oil is separated from the mixture. Now add the fenugreek leaves to the mixture.
  9. Add the paneer cubes along with a cup of water.
  10. Cover with a lid and cook for about 2 minutes on a medium to low flame.
Delicious Paneer lababdar is now ready to serve. Topple it with some fresh cream and chopped coriander leaves. Serve hot with naan, pulaav or chapattis.

7. Paneer Pulao Recipe

8. Shahi Panneer Recipe

Shahi paneer, as the name suggests is a royal dish originating from the Mughal Empire. It is blended in a thick creamy mixture of almonds, fresh cream, tomatoes and other spices.

Required Ingredients:

  • Paneer, cubed – 250 gms
  • Almonds – 15 to 20
  • Oil – 2tbspns for frying
  • Garam masala (whole spices)
  • Garam masala powder – 1tsp
  • Cumin seeds – 1tsp
  • Onion, chopped – 1
  • Black pepper – 1tsp
  • Coriander powder – 1tsp
  • Khoya – ¼ cup
  • Water as required
  • Salt as required

How To Prepare Shahi Panneer?

  1. Blanch the almonds in hot water and grind them into a smooth paste by adding a tablespoon of water. Keep this aside.
  2. In a pan, add the cumin seeds and when they start spluttering, add in the chopped onions and when it turns golden, add the ginger garlic paste, whole spices (garam masala), coriander powder, pepper powder, salt and the almond paste.
  3. Now, add a little water, cover the lid and cook for 30 minutes
  4. Add in the paneer cubes, garam masala powder and khoya. Mix all these ingredients well so that they incorporate into the mixture.
  5. Cook for 5mins and Shahi paneer is now ready to serve.
Tip – You can serve this with a dollop of butter or fresh cream on top.

9. Paneer Pasanda Recipe

Paneer Pasanda is a delicious meal where shallow fried paneer stuffed sandwiches are dipped in a smooth creamy gravy.

  • Total time: 25 minutes (approx.)
  • Servings: 4

Required Ingredients

  • Paneer – 250 gms
  • Corn flour – 2tbspns
  • Cashew nuts, chopped – 1tbspns
  • Raisins – 2tbspns
  • Whole garam masala spices – 1 each
  • Onion, finely chopped – 1
  • Tomatoes, chopped – 2 large
  • Ginger-garlic paste – 1tbpsn
  • Coriander powder – 1tbsp
  • Tumeric powder – a pinch
  • Kasoori methi – 1tspn
  • Cream – 1tbspn
  • Salt as required
  • Water as required
  • Coriander leaves for garnish

How To Prepare Paneer Pasanda?

  1. In a pan, add the roughly chopped tomatoes, cashews, whole garam masala spices, and 1 cup of water.
  2. Cook the mixture until the tomatoes are soft. Turn off the flame once the tomatoes are softened.
  3. Grind this mixture into a fine paste, add water if necessary. Keep it aside.
  4. Heat 2 tbspns oil in a pan, and add 1 cup of chopped onionsand turn them golden brown. (Tip – Add a pinch of salt for the onions to turn brown quicker)
  5. Grind the fried onions in a jar and make it into a paste by adding a little water. Keep this aside.
  6. In a large bowl, add 2 tbspns of grated paneer, raisins, a few cashews, green chillies, chopped coriander leaves and chopped mint leaves.
  7. Now add the red chilli powder, cumin powder and salt. Mix all the ingredients together and keep it aside.
  8. Slice the paneer into triangle shapes and carefully slice each triangle into two halves.
  9. Start stuffing the mixture into these triangles, little by little and press gently to make it a sandwich. Be very gentle, the paneer sandwiches may get broken otherwise.
  10. In another bowl, add corn starch and mix a little water and dip the paneer sandwiches in this batter.
  11. Shallow fry these sandwiches in a pan and drain them and keep aside.
  12. In the same pan that we prepared the tomatoes mixture, add some oil and 1 bay leaf, shahi jeera, ginger garlic paste and sauté all the ingredients well.
  13. Now add the tomatoes mixture, cook for about 5 minutes on a low flame.
  14. Now stir in the fried onion paste, sauté for about 5 minutes and then add the red chilli powder, coriander powder and turmeric powder.
  15. Now add in the paneer sandwiches and quickly turn off the flame.
Paneer pasanda is now ready to be served. It tastes best when accompanied with Tandoori roti, naan, lacha paratha etc.

10. Chilli Paneer Recipe

Chilli Paneer is an indo-chinese dish containing Indian spices with a blend of Chinese flavours the right way. Savour this dish as a party starter and it is sure to become the dish of the day.

How To Prepare Chilli Paneer?

  1. In a large bowl, add paneer cubes, salt, ginger garlic paste, water, egg, maida and mix all the ingredients together.
  2. In a pan, fry the paneer cubes from the mixture in a medium to low flame.
  3. In another pan, heat some oil and add cumin seeds. Wait for it to splatter. Then, add the chopped garlic cloves, green chillies, onion, coriander powder, ajjinomotto, soy sauce, bell pepper, lime juice and the remaining ingredients.
  4. Now add the paneer and mix together all the ingredients well.
  5. Serve with some freshly chopped coriander leaves.
