1. Hash Browns with Eggs

Hash Browns with Eggs

This super simple and quick breakfast recipe is to be prepared in a skillet. Crispy hash browns combined with pepper, some pieces of chicken (or meat) and melted cheese. This delicious breakfast, not just helps you jump start the morning but also keeps you going for the whole day.
  • Preparation Time: 20 minutes
  • Total time: 30 minutes (approx.)
  • Servings: 5

Ingredients:

  • 2 medium potatoes
  • 3 strips of chicken (or meat)
  • 1 bell pepper – Chopped
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 4 eggs
  • ½ cup shredded cheese, preferably Mozzarella
  • Oil – 4tbsp
  • Handful of parsley or coriander leaves – chopped (Optional)

How To Prepare Hash Browns with Eggs?

  1. Wash and peel the potatoes and grate them using a grater. Place the shredded potatoes in a large bowl lined with paper towels.
  2. Now, place more of paper towels on top and press so that the excess moisture from potatoes comes off. You need to get rid of the moisture from potatoes, so squeeze them with paper towels until all the moisture is absorbed.
  3. Place the skillet on stove and turn the flame on. Pour 2 tablespoons of oil and place the chicken stripes, cook on both sides for about 3 minutes or so, until they are golden and crisp.
  4. Remove from the skillet and set it on a plate. After it has cooled down a bit, you can chop into tiny pieces.
  5. Place the skillet on the stove again. Add 2 tablespoons of oil and add the shredded potatoes. Let it cook for about 5 minutes, while giving the occasional stir.
  6. Now add the chopped bell pepper, salt and pepper and mix well. Using a spatula, flatten all the shredded potatoes.
  7. Let it cook for 5 more minutes and at this point, the potatoes should be crisp and brown.
  8. Now add in the chopped pieces of chicken and cook again for 2 minutes. With the back of a spatula, make 4 shallow holes in the skillet, crack in one egg in each hole.
  9. Top it with some shredded cheese and lower the flame for 2 – 3 minutes and allow the egg to cook and cheese to melt.
  10. Turn off the flame and top it with some freshly chopped parsley or coriander leaves.

2. Omelette Sandwich

Here’s an Indian version of the omelette packed in a sandwich with slices of bread. Makes for a perfect breakfast and can as well be had as an evening snack! Delicious and nutrition packed, you can’t say no this one.

Ingredients:

  • 2 slices of regular or brown bread
  • Eggs – 1 large or 2 small
  • Oil – 1 ½ tsp
  • Salt as needed
  • A pinch of turmeric
  • Ground black pepper
  • A pinch of chaat masala
  • Chopped onion – 2 tablespoon
  • Capsicum – 1 tablespoon
  • Green chilli – 1chopped
  • Coriander leaves or cilantro – chopped
  • Cheese slice – 1
  • Tomato ketchup – as needed

How To Prepare Omelette Sandwich?

  1. Beat eggs in a bowl, add in the chopped onions, capsicum, coriander leaves, salt, turmeric and black pepper.
  2. Heat oil in a pan, add the egg mixture and allow it to cook until the mixture rises a bit.
  3. Flip over the egg mixture and fry until it is cooked well. Now flip it back again and place the cheese slice and cover the lid for just about a minute so the cheese melts and then turn off the flame.
  4. Toast your bread slices beforehand, as soon as the egg is done, place the omelette in between two slices of bread.
  5. Top it up with some ketchup or any chutney of your choice.
Important Tip: Green chutney works best in an omelette as it helps ease the digestion, and is of course tasty and tangy.

3. Shakshouka

Ingredients:

  • Olive oil – 1tbsp
  • Medium sized onion –chopped
  • Garlic – 3 cloves, chopped
  • Medium sized green or red bell pepper – 1
  • Tomato paste – 2 tbsp
  • Chilli powder – 1tsp
  • Cumin powder – 1tsp
  • A pinch of salt
  • A pinch of black pepper
  • Eggs – 6 to 7
  • Parsley or coriander leaves – as reqd.

How To Prepare Shakshouka?

  1. Heat a large skillet pan, add olive oil and when it is slightly heated up, add in the chopped onion and sauté for a while until it is translucent. Add in the chopped garlic cloves and bell pepper and sauté for until it is soft.
  2. Now add the tomato paste and stir until well combined. Add in all the ground spices and let the mixture cook in medium heat for about 5 – 7 minutes.
  3. Crack the eggs, one at a time, over the tomato mixture and cover the pan with a lid. Allow the eggs to cook for about 10 – 15 minutes. After 10 – 15 minutes, the quantity of sauce should have been reduced.
  4. Garnish with chopped parsley and some more black pepper!

4. Frittata Italiana

A very scrumptious Italian dish that is ideal for breakfasts. Soft, creamy and infused with dried Italian herbs, Frittata is a very famous recipe to be made with eggs.

  • Softened cream cheese – 1 cup

  1. In a heavy bottomed saucepan, heat about 3 inches of water and let it come to a boil. Adjust the heat in order to prevent excessive boiling.
  2. Break the eggs straight inside the water, one at a time. You can also break the eggs in a saucer first and slip it into the water.
  3. Let the eggs cook until the whites are completely set and the yolks are nice and thick. Make sure the yolks don’t get hard. This should take about 3 – 5 minutes.
  4. Lift the eggs from water with the help of a slotted spoon. Drain the water on the paper towels and sprinkle it with salt and pepper. Serve hot!
